Chickpea Tuna Salad

I see vegan YouTubers chomping this down all the time in sandwiches, and I love tuna salad sandwiches, so I wanted to give this a try.
My mayo is still egg-based...but you could get a vegan mayo to have an animal product-free product!
Ingredients

- 1 can chickpeas
- 2 stalks of celery
- 1/4 cup dill pickle
- 2.5 tbsp mayo
- 1/4 tsp soy sauce
Methodology
Rinse and drain the chickpeas.

Dice up the celery to fine pieces.

Dice up the pickles too.


Mix everything together in a bowl.



Wow, appetizing, huh?
Keep it in the fridge to let the flavors meld.

Results

Serve on crackers or toast or whatever you like!
Pretty tasty and very similar to tuna salad since the pickles have some briny-ness that is similar to the fishiness of tuna. I'd make this again for sure.
